Coconut Dream Pie

Introduction

The most un-diet-like diet-friendly dessert ever! The most un-diet-like diet-friendly dessert ever!
Number of Servings: 12

Ingredients

    2 envelopes Kraft Dream Whip Topping - dry mix (unprepared)
    2 3/4 cup skim milk
    1 tsp vanilla extract
    1 tsp coconut extract (optional)
    2 (4 serving) boxes fat-free vanilla pudding mix
    1 cup coconut, toasted
    1 (9-inch) graham cracker crust (may use any type shell you wish, or serve this as a mousse without a shell)

Directions

Beat whipped topping mix , 1 cup of milk and vanilla on high for 6 minutes till very stiff (6 minutes ... don't under beat)

Add remaining milk and pudding mixes, and coconut extract (if using) beat on high for 2 minutes. Fold in coconut, pour into pie shell.*
Reserve 2 TBSP of coconut for garnish if desired.

Chill at least 4 hrs. Sprinkle with reserved coconut or a few very fine chocolate curls to garnish.

*** To save almost 100 calories per serving ... do not make in a pie shell. Instead, fill individual dessert cups with pie filling and sprinkle ligtly with low fat graham cracker crumbs (toasted).

    Dream Whip has a very different consistency than Cool Whip. With Dream Whip the pie has a stiff fluffy cream pie texture and less calories. Cool Whip may produce a much runnier pie and adds lots of calories. Dream Whip is the key ingredient for fluffiness and for making it LOWER in calories. - 3/20/08

    This recipe is AMAZING!!! You can take out the coconut and use other flavorings or change out the vanilla pudding for different flavor to add variety. I make a different dream pie every week. - 1/6/09

    I would love to try this...can anyone tell me how to toast the coconut and graham crackers? - 1/7/09

    I toast the coconut by spreading it out on a large cookie sheet or jelly roll pan and placing it in a very low oven (300f or 350f) for a few minutes. I don't know the exact time (maybe 5-10 mintues)I just keep checking on it and stirring it around occasionally untill it gets lightly brown.

    This sounds amazing! I can already see myself changing it up with banana pudding, chocolate, vanilla...I even have a few boxes of pumpkin spice pudding mix left over from the fall (although I may omit the coconut for that). Thanks and I can't wait to try! - 5/27/09

    sounds good I might try to change this recipe a little by using a light cool whiip and omitting the milk & dream whip - 12/2/07

    Cool Whip Free is not the same as Dream Whip ... using it will definitely change the calorie content as well as the finished texture of the pie - it won't be as 'stiff' or have the more 'authentic' cream pie texture. But i bet it will still taste yummy! Enjoy!

    Are you saying you cut the pie in 12 rather than 8? That would be hard to do? What would the nutritional values be if you used 8 now that I just got a pie 8 divider. No rating yet It isin the refrigerator for 4 hours now. Bigger than Joanna Lund recipes - 3/14/13

    I have made my version of this for years and never got a runny pie with the cool whip. I use less milk with the puddings. I also use SF Fat free cheesecake pudding . LIttle boys love it with chocolate pudding... - 7/31/12

    Use fat free cool whip, skim milk instead of dream whip and you can either use a reduced fat crust OR make your own with reduced fat graham crackers and Olivio spray. - 1/24/08

  • I cut the recipe in half because I live alone and did not use a crust to save on calories. I also had some lite coconut milk on hand and used that in place of the skim milk. Found you don't need to each much of this to feel satisfied. Really liked it! - 2/1/14

    This sounds really good, but I think I might make a mint dream pie instead since my daughter doesn't like coconut. I'll halve it too and just make little dessert cups. Maybe top with a couple crushed thin mints. - 3/14/13

  • This definitely satisfied my sweet tooth. I took the tip of not using a pie shell and sprinkled the graham crumbs on top. It was Perfect! Thanks for Sharing . I am not sure on how the calories were caculated. I counted 117 minus the graham crust . Still worth every bite. - 1/29/13

  • This was very good but for some reason I had a really difficult time mixing in the coconut extract. It became brown & clumpy &I had a difficult time incoorporating it into the pie filling. Even after refrigerating it for 4 hours, there were still bites of pie that were bitter and tasted like alcohol - 6/2/12

  • Awesome recipe although I question the calories. When I put them through the calculator, using Cool Whip Free, they were a lot higher. Still - very good and a hit with the family. - 3/20/08
