Turkey Harvest Chili

Introduction

This is a great chili for the fall now that it's starting to get cold. It not a traditional chili - it has corn and no beans, but you can alter if you please. Number of Servings: 8

Ingredients

    1 Tbsp Olive Oil
    1.25 lbs 93% lean Ground Turkey
    1 medium onion chopped
    2 cloves garlic minced
    2 bell peppers (any color will do) chopped
    3 Tbsp Chili powder
    1 Tbsp Cumin
    1 20oz can tomato puree
    1 10oz box frozen corn
    Hot sauce to taste

Directions

Over medium heat, brown turkey with olive oil, breaking up with a wooden spoon. Add chili powder, cumin, salt, pepper and hot sauce to turkey. Before turkey is fully cooked, add onion, garlic and peppers. Continue to cook until turkey is browned and vegetables are soft. Add tomato puree and bring to a simmer. Defrost corn in microwave and add to chili. Allow to simmer for at least 15 minutes, stirring occasionally. Before serving, taste chili and add extra hot sauce or chili powder if not spicy enough. Serves approximately 8.
