Pam's Mock Risotto

Introduction

Number of Servings: 4

Ingredients

    6 oz. orzo pasta
    6 oz chicken breast, chunks, pre-cooked
    1 c corn kernels
    3 c broccoli flowerets
    2 c spinach leaves
    Large pot of boiling, salted water
    2 wedges of Laughing Cow Light Swiss spreadable cheese

Directions

Bring a large pot of salted water to a boil. Add the pasta and let it cook 5 minutes. Add the pre-cooked chicken and let cook 2 more minutes. Add the remaining ingredients and let cook 3 minutes. Drain, reserving some of the cooking liquid.

Mash the cheese wedges and add the hot cooking liquid, stirring well to make a thin sauce. Pour into the pasta/veg and stir. If it is still too dry, add additional cooking liquid. Add whatever seasonings you like - I add garlic powder, basil and oregano along with lots of black pepper.
