1 Carton Egg Beaters (8 servings or 2 c.) 1 c. Mushrooms 3 tbsp. Red Onion (chopped) 3/4 c. Tomato (chopped) 1/3 c. Yellow Bell Pepper (or red or green) 1/2 c. Fat Free Shredded Cheddar Cheese 2 tbsp. Fresh Parsley (chopped)
Place Mushrooms, Bell Pepper, Onions, Tomato, and Parsley in the bottom of a 1 1/5 Quart Baking dish. Use cooking spray to coat bottom of dish. Pour in egg beaters and sprinkle cheese on top. Add salt or pepper to taste. Bake for 20 minutes at 375 or until bubbly on top.
For variation you can any of your favorite vegetables.
