Chicken Rice Divan Bake

Introduction

Number of Servings: 6

Ingredients

    I package of frozen veggies(calories counted with Frozen broccoli florets)
    1 Cup grated low fat cheese(Cheddar or combo)
    2 Cups cubed chicken
    Salt and Pepper to taste
    1.5 Cups of cooked brown rice
    2 Tbs Butter
    2Tbs flour
    1 Cup milk 1%
    1 Tbs Fresh squeezed lemon juice
    1 cup Fat Free Sour Cream

Directions

Cook vegetables according to package directions: drain well. Arrange broccoli in 13x9(it could be smaller but not much) in baking dish. Season with a little salt and pepper
Sprinkle with half of the cheese: top with cubed chicken.

In a sauce pan melt the butter over low heat. blend in flour and stir until it no longer bubbles. add milk slowly while whisking to prevent lumps
Cook, Stirring constantly over medium heat until mixture thickens and bubbles. Remove from heat; stir in lemon juice and fold in sour cream. Pour over chicken. Sprinkle with remaining cheese
Bake at 400 deg. for 15-20 min
