    2 T unsalted butter
    6-8 cloves garlic
    4 C low-salt chicken broth
    6 oz fresh or frozen cheese tortellini
    14 oz canned diced tomatoes with their juice
    10 oz spinach, washed, stemmed, coarsely chopped
    8-10 basil leaves, coarsely chopped


Melt butter in large saucepan over medium-high heat. Add garlic and saute until fragrant, about 2 minutes. Add broth and bring to boil. Add tortellini and cook halfway, according to package directions. Add tomatoes and juice, reduce heat to simmer and cook just till pasta is tender. Stir in spinach and basil and cook until wilted, 1to 2 minutes. Serve with grated Parmesan.
