Potato Soup

Introduction

This is a take on my grandmother's potato soup. It's the perfect comfort food for cold weather. This is a take on my grandmother's potato soup. It's the perfect comfort food for cold weather.
Number of Servings: 6

Ingredients

    3 lbs diced red potatoes (I don't peel the potatoes.)
    1 Tbsp buttery spread (I use Promise Activ)
    1.5 C diced yellow onions
    1.5 C diced celery
    4 C water
    3 tsp Herb Ox Chicken Broth
    2 tsp kosher salt
    2 C milk (I use 1%)

Directions

1. Saute onions and celery in spread in a 4-5 quart pot.
2. Add potatoes, water, Herb Ox broth. Cover.
3. Cook until potatoes are very tender, about 20 minutes.
4. Mash the mixture using an immersion blender or a hand masher (mixture will be lumpier but just as good).
5. Add milk and let mixture get hot. Do not bring to a boil
6. Enjoy!
