Chickpea Avacado Salad

Number of Servings: 10

Ingredients

    Chickpeas (garbanzo beans), 2 cup
    Avacado - 1 medium
    Red Ripe Tomatoes, 2 plum tomato
    English Cucumber (with peel), 1/2 cucumber
    2 Cups Hearts of Palm or 1 Cup Artichoke Hearts
    Black Olives, canned (small-extra large), 1/2 Cup
    Scallions, raw, 1 medium (4-1/8" long)
    Parsley, dried, 1/2 tsp
    Red Wine Vinegar, 2 tbsp
    Extra Light Olive Oil, 1 tsp

Directions

Combine all but last 3 ingredients together in a large bowl.
Chop them as small as the chickpeas (or smaller).

In a small dish, combine parsley flakes, Red wine (or balsamic) vinegar, and olive oil. Whisk together a drizzle over other ingredients.

Mix everything together with a large spoon and serve immediately.
