G5 Cornmeal Muffins

Introduction

Corn muffins made on the George Foreman Grill with modifications from the original recipe. I think they have a different idea from mine of what measuring batter with a tablespoon means. The only way I can see to get even close to 16 muffins (which more closely resemble biscuits) is to level the batter in the tablespoon. Ever tried that with a sticky batter? Ingredients

    Whole Wheat Flour, 0.5 cup
    Cornmeal, .5 cup
    Sucralose (like Splenda), 2.25 tsp
    Brown Sugar, 2.25 tsp packed
    Baking Powder, 1.25 tsp
    1/4 tsp salt
    Egg, fresh, 1 large
    Unsweetened Almond Milk 1/3 cup + 2 Tbsp
    Safflower Oil, oleic, 1.5 tbsp

Directions

1) Mix dry ingredients in a medium bowl.
2) Add remaining ingredients, mix thoroughly to produce a thick batter.
3) Grill set up: Steak plate in top, baking pan in bottom, preheat on medium. Grill is at cooking temperature when green light goes off.
4) Place single tablespoons of batter1" apart in baking pan, and close lid. Bake for 10 -12 minutes. Transfer muffins to cooling rack with non-stick safe spatula. Repeat until all batter is used.

Makes 10-12 Muffins, 2 muffins/serving
