Ingredients

    14 oz. vegetable broth
    8 oz. chicken broth
    14 oz. diced, italian style tomatoes
    1/2 red onion, sliced
    1-14 oz. can cannelini beans, drained and rinsed
    1- 14 oz italian green beans, drained
    1 packet Boca meatless ground burger
    1- medium yellow squash, halved and sliced
    1- medium zucchini, halved and sliced
    1/4 c. dry whole wheat couscous
    1.5 tbsp dry parsley
    1 tsp black pepper
    2 tbsp fresh basil
    2 tbsp fresh oregano
    1 tbsp fresh rosemary

Directions

For best flavor, use fresh herbs.

Place a large pot over medium heat. Combine chicken broth, vegetable broth, tomatoes, cannelini beans, italian green beans, and Boca crumbles. Heat until broth is slightly bubbling. Add sliced squash, zucchini, and seasonings. Add the whole wheat couscous last. Heat to boiling. Reduce heat and simmer 10-12 minutes.

A nice compliment to a salad.

Makes approx. 6 - 1 cup servings.
