180g (1 1/2 cups) cornmeal 80g (2/3 cup) whole wheat flour 12g (1 T. ) sugar 1/2 tsp. salt 2 tsp. baking powder 1/2 tsp. baking soda 1 1/2 cup buttermilk 2 eggs 2 T.lard or bacon grease
Preheat oven to 425. Place lard or bacon grease in a 10 inch cast-iron skillet. Place skillet in oven while mixing batter. Combine dry ingredients.Whisk together buttermilk and eggs. Stir into dry ingredients and mix gently. Pour excess melted grease into batter and mix. Pour batter into skillet. Bake for abour 20 minutes or until light golden brown.
