Introduction

A co-worker gave me her recipe for these. They are the most amazing no-bake cookies I've ever had! I try to make it with as much organic ingredients as possible. The Naturally More peanut butter adds a nuttier flavor to it than regular creamy peanut butter. Everything doesn't have to be organic, but it's better for you and the environment! Number of Servings: 32

Ingredients

    2 sticks butter or olive oil spread
    4 c turbinado sugar
    c organic cocoa
    1 c organic milk
    1 c Naturally More peanut butter
    6 c organic oats
    1 T organic vanilla

Directions

Boil the butter, sugar, cocoa, and milk hard for 1 minute. Remove from heat. Add the peanut butter, oats, and vanilla. Beat until well mixed. Line a jellyroll pan with wax paper or aluminum foil. Pour the mixture into the pan and spread to fill the entire pan. Leave overnight to cool. Cut into bars and serve!
They can probably be cut into smaller bars since they are quite thick.
