2 cups Boneless Skinless Chicken Breast
1/2 cup Light Mayonaise
1/4 cup Low Fat Sour Cream
2 tbsp hot sauce
2 cups Shredded Mozzarella Cheese
8 Whole Wheat Tortillas
4 Medium Celery Stalks, diced
2 Plum Tomatoes, diced
Combine mayonnaise, sour cream, hot sauce and 1 cup of mozzarella.
Coat the skillet with non-stick cooking spray and place over medium heat. Add tortillas and heat 3 to 5 minutes. Turn tortillas and spread with one-fourth of the cheese mixture, leaving a 1/2-inch edge.
Sprkinkle 1/4 of the diced chicken on top. Sprinkle remaining cheese mixture over chicken. Place second tortilla over the mixture. Cover, reduce heat slightly and cook 4 minutes until cheese begins to melt. Remove from pan and keep warm. Repeat with remaining ingredients.
Sprinkle with diced celery. Serve with additional hot sauce and diced tomatoes, if desired.
Makes 4 servings as a main dish or 12 as an appetizer
