Even Better for you Oatmeal Cookies

Number of Servings: 72

Ingredients

    1-1/4 cups unbleached flour
    1/3 cup soy flour
    1/3 cup whole wheat flour
    2 cups old fashioned steel cut oats
    1 tsp baking soda
    1/2 tsp salt
    1 tsp ground cinnamon
    1/4 cup unsalted butter (softened)
    1/2 cup canol oil
    3 Tbsp Milled Flax seed
    1/2 cup splenda (white)
    1/2 cup splenda (brown)
    1 tsp vanilla
    2 large eggs

Directions

Combine first 7 ingredients, mix together & set aside.

Mix together butter, oil & sugars. Add flax see, vanilla & eggs. When all is well blended, add dry ingredients that were set aside.

Chill the dough a few minutes in the freezer.

make 1 inch balls and place on cookie sheet. Use fork to flatten.

Bake at 375 for 8-9 minutes.
