Meatball Vegetable Soup

Introduction

This is a basic recipe which all the vegetables can be switched out for whatever you like. I have made it with just the meatballs and kale. Make 8 serving so good to take for lunch for several days. Ingredients

    1 lb. Ground Beef 93% Lean
    2 Italian Sausages
    8 cups Beef Broth
    1 large can whole or diced tomatoes, canned, , (2 cups)
    1 cup Onions, chopped
    1 cup Celery, diced
    1 cup Carrots, chopped
    2 cups Green Beans (about 2 inches long)
    2 cups Cabbage, chopped
    2 Tablesopoons of Italian Seasoning (oregano, rosemary, parsley, etc),
    1 Green Chiles (long or big Jim)
    1 Egg
    1 cup Mushrooms chopped
    1/2 cup Onions chopped fine
    Garlic, 2 cloves minced
    Garlic, 4 cloves chopped
    1 teaspoon salt
    1/2 teaspoon pepper
    2 Tablespoons of Olive Oil

Directions

Meatballs
1. Mix the ground beef, sausages, mushrooms, 1/2 cup of onions, garlic, egg and salt and pepper.
2 Make meatballs about tablespoon size. (Makes about 24)
3. Place on a cookie sheet and bake at 350 for 30 minutes.

Soup
1. Add olive oil to large soup pot
2. Saute 1 cup onions in oil till translucent
3. Add 4 cloves of chopped garlic - cook a couple of minutes
4. Add celery, carrots and chili pepper (green pepper can be used}
5. Cook for about 5 minutes (stirring every couple of minutes)
6. Add beef broth
7. Add canned tomatoes
8. Cook for another 10 minutes (getting the celery and carrots about half done)
9. Add green beans
10 Add cabbage
11. Add meatballs
12. Simmer till veggies are done.
