4 garlic cloves
1 sm. red onion
1 - 15oz. can diced tomatoes
3 c. uncooked penne
3 c. chicken broth
3/4 c. white wine
1/2 tsp. salt & pepper
1 T. dried basil
1/4 c. parmesan cheese
1 1/2 lbs. boneless, skinless chicken breasts, fat removed
Slice garlic into micro safe casserole dish, followed by onion, tomatoes, garlic and onion. Cover, micro on high 4-5 minutes or until tomatoes begin to burst, stirring after 2 minutes. Crush tomatoes. Add pasta, broth and wine.
Return to micro; cover and cook on high 16 - 18 minutes or until pasta is tender, stirring after 10 minutes.
Remove from micro, add basil, cheese and chicken to dish.
Yields 8 servings.
