Autumn Pork Roast

Ingredients

    2-3 lb boneless pork loin roast, trimmed
    2 or 3 large sweet potatoes, peeled and sliced
    Tbs Thyme
    Salt
    Pepper
    4 cups unsweetened apple juice
    1 can of cranberry sauce

Directions

Salt and pepper both sides of pork loin. Place in crockpot, and layer sweet potatoes on and around roast. Sprinkle with Thyme and little more salt and pepper. Cover with the apple juice and cranberry sauce.

Cook on low for 6-7 hours.
