Lentil Curry

Ingredients

    1 cup dried lentils
    3 cups water
    14.5 oz diced tomatoes
    2 cloves garlic
    1/2 small onion
    1/2 cup chopped carrots
    1 cup chopped celery
    1 bell pepper
    1.5 tbsp curry powder

Directions

1. Simmer lentils in 3 cups of water for about 20 minutes.
2. Add tomatoes, garlic, onion, carrot, capsicum, celery, curry powder, and salt. Simmer for 30 more minutes.
