Anelia's Mashed Potatoes

Introduction

Low on calories, high on taste. You could use a low-fat sour cream to make it even leaner but I don't have that available to me here and, frankly, it does not make that much of a difference for one serving. Ingredients

    125 g (4.5 oz) raw potatoes
    1 tbsp sour cream
    salt to taste
    black pepper (optional)

Directions

1. Boil the potatoes and peel them or if you are in a hurry peel, cut into pieces and boil.

2. Put boiled potatoes, sour cream, salt and pepper in a bowl or a food processor and mash together until desired texture is achieved. Depending on the sort of potatoes I sometimes add a bit of water too to make the mixture fluffier, but be careful with the quantity there.

3. Adjust the seasoning and serve warm.
