Caramel Apple Salad

Caramel Apple Salad

Introduction

Great as a side dish or dessert! Great as a side dish or dessert!
Number of Servings: 16

Ingredients

    8 oz. tub of Cool Whip FREE
    1 box sugar free instant Butter Scotch Pudding mix
    14 oz. can pineapple tidbits in juice
    4 large Red Delicious or Fuji Apples (or more)
    4 large Granny Smith Apples (or more)

Directions

Combine pudding mix and pineapple (with juice) in large bowl. Mix well and set aside. Dice apples into small pieces and combine with pudding mixture. Fold in Cool Whip FREE till well mixed. Chill and serve.

** I like to make this with as many apples as I can put into the pudding mixture and still have the apples pieces fairly well coated ... lots more apple than creamy mixture ... almost like a dressing.

** This is also delicious made with Sugar Free Vanilla pudding. It doesn't have the same 'caramel apple' flavor, but it is incredibly yummy!

    *LOL* I totally agree ... but actually my serving calculations are based on 1/2 of an apple per serving (+ all the other ingredients of course) but I often make it with as many apples as I can pack in and still have a little 'sauce' on them ... so larger servings are okay too! ;)

    Absolutely loved this recipe!! Apples, Pineapple, Cool Whip...all of my favourite foods. If you make the recipe using 8 apples, be sure to use the largest bowl in the house...this salad is big. - 8/26/09

    Tastes too good to be healthy, but it is!!!! YUM!!!
    (I drained "most" of the pineapple juice into a bowl and set aside to see how runny it would be on its own. I was glad I did because I didn't even use the juice I set aside.) - 8/29/09

    Start out using a BIG bowl as it really makes a lot! My teenage daughter took some directly out of the mixing bowl as she had one taste and wanted more right then. Good recipe! - 10/11/09

    POSITIVELY SCRUMPTIOUS!!! Made this dessert special for me today and not once did I feel like I was "missing out". In fact, others were wanting my dessert over the ones that I was purposely trying to avoid. Just one thing, what is the proper serving size? Thank you! :) - 7/4/09

    This was great! Just sweet enough to satisfy that dessert craving, yet not to heavy. My family loved it. I added some crushed walnuts and only used 1/2 the tub of cool whip. yummm! - 11/22/07

    Lite Cool Whip is available in Canada. Does anyone know if Cool Whip Free is also available? I use the lite, but would would like to purchase Cool Whip Free. By the way,
    if you add mini marshmellow to this recipe it takes it from great to fabulous. More calories though. - 9/10/09

    This was SO good. I couldn't get the butterscotch pudding mix so I used 4 pudding cups, reduced the amount of cool whip and omitted the pineapples so it wouldn't be too runny. It added to the calorie count a little but it was SO worth it! Can't wait to try it with the mix and pineapples. - 7/4/09
