Banana Crepes

Introduction

Ingredients

    Crepes:

    2 eggs
    1 tbsp margerine, melted
    1/8 tsp salt
    1/2 c. flour
    2 tbsp vanilla
    1 c. 1% milk

    Sauce:

    1/2 c. margerine
    3/4 c. sugar
    3/4 c. orange juice

    6 medium bananas
    blueberries for garnish (optional)
    icing sugar for garnish (optional)

Directions

For the crepes:
in a medium bowl combine melted margerine, eggs, milk and vanilla. In a smaller bowl combine flour and salt.
Add flour mixture to the egg mixture and combine with a whisk or electric mixer for fewer lumps. Don't over mix or the crepes will be tough.

Using a crepe pan cook for about one minute per side. If you don't have a crepe pan any flat pan will do. To cook crepes, oil the pan lightly and heat over medium-low heat. When the pan is heated lift it from the heat and drop about 1/4 c. of batter into the pan and turn it in circles until the batter has spread over the entire pan and is very thin. To flip I use a small silicone spatula, slide it under the crepe and allow it to hang like laundry on a line and the flip it!
Stack the crepes on a plate with wax paper between them. This can be done ahead of time.

For the sauce:
Put butter, sugar and orange juice into a shallow pan and bring to a boil. Cook until it reaches a syrup consistency, about five minutes. Cut your six medium bananas in half lengthwise and add to the pan of syrup. Coat the bananas and ket them warm, about three minutes. Remove each half from the syrup and roll it in a crepe.
Pour 1 tbsp of syrup over the crepe and garnish it with blueberries and sprinkle with icing sugar.
