Fast Omelette with Salsa and Sour Cream

Ingredients

One large egg
Two egg whites
1/4 cup chopped green onion
1/4 cup chopped broccoli
1/4 cup chopped green pepper
25 grams finely shredded cheddar cheese
splash of milk
cooking spray
2 tbsp reduced fat sour cream
3 tbsp salsa
Directions
Heat cooking pan.
In small bowl, whisk together egg and egg whites along with milk. Pour into pan after spraying it with cooking spray and use a fork to get rid of air bubbles. Sprinkle half the shredded cheese on top before distributing the veggies. Add the rest of the cheese.
Cook for a few minutes until edges harden, then fold and turn element down. Cook until desired tenderness. Serve with salsa and sour cream (included in nutritional info) and toast! Fast and easy.
