Ingredients

    Chicken Mild Italian Sausage, 3 links at 90 cals per link
    Canola Oil, 1 Tbsp
    Onions, raw, 1.66 cup, chopped
    Garlic, 3 cloves, minced
    Celery, raw, 2 stalk, large (11"-12" long), chopped
    Carrots, raw, 3 large (7-1/4" to 8-1/2" long), chopped
    1 potato, diced (360 grams used in calorie calculation)
    Canned Petite Diced Tomatoes, 3.5 cup (28 oz can)
    Collards, 2 cup, chopped
    Soup, chicken broth, canned, less/reduced sodium, 8 cup Dark Red Kidney Beans, 1.75 cup (1 can)
    Yellow Sweet Corn, Frozen, 1.5 cup kernels
    Green Peppers (bell peppers), 1 cup, chopped
    Green Mountain Gringo Salsa (Hot), 1 cup

Directions

Makes 9 servings, 1.5 to 2 cups each.

Saute onion & garlic in 1 Tbsp Canola Oil. Add broth, chopped carrots, celery, sausage and potato. Simmer 20 minutes until vegetables are tender. Add collards, simmer 5 minutes. Add tomatoes, salsa, green peppers, corn, and beans. Simmer 20 min
