Curried Carrot Raisin Salad

Introduction

This is a slight twist on an old favorite. We love it in a pita or wrap. It is great by itself as a veggie sandwich, but it is also really good paired up with sliced turkey or chicken. Ingredients

    10 ounces carrot matchsticks (1 bag)
    4 ounces raisins
    1 teaspoon curry powder (more or less to your taste)
    1/2 cup low fat mayonaisse

Directions

1. EMPTY the bag of carrots into a large bowl.

2. ADD the raisins, curry powder and mayo.

3. STIR to combine.

This makes 9 servings of 2 ounces (or 1/2 cup).
