AJ's Easy Beef Stew

Introduction

Number of Servings: 8

Ingredients

    nonfat cooking spray like Pam
    2.5 pounds lean beef steak
    32 oz. beef broth
    2 cups chopped carrots
    2 cups chopped celery
    4 cups chopped white potatoes (or 2 cans sliced potatoes)
    1 can sweet corn
    1 can peas
    1 can wax beans
    2 cans diced or crushed tomotoes
    1-6 oz. can tomato paste
    3 cans/jars low fat beef gravy (2 grams of fat or less)

    Additional spices:
    Garlic powder
    Onion powder
    salt
    black pepper
    rosemary
    thyme

Directions

1. Cube round steak. In a large stew pot, brown the round steak with a non-fat cooking spray on medium heat. Season with garlic & onion powder, rosemary, thyme, salt & pepper.
2. Once the meat is browned (it can still be pink in the middle), add the beef broth and turn the heat up to medium-high.
3. Chop carrots, celery, onion and potatoes into 1-inch cubes.
4. Carrots, celery, onion, potatoes go in the pot.
5. Add UNDRAINED canned tomatoes, tomato paste, UNDRAINED canned sweet corn, UNDRAINED canned peas, UNDRAINED canned green or wax beans, and 3 cans/jars of beef gravy.
6. Season well with additional rosemary, thyme, salt, and pepper.
7. Turn up heat to high, cover, and bring to a boil.
8. After stew boils, turn heat down, cover & simmer for another 35 minutes.
9. Serve hot with crispy bread or biscuits.
