Ingredients

    1 cup white flour
    1/2 cup whole wheat flour
    1/4 cup flax seed meal
    1/4 rolled oats
    1/2 tea baking powder
    1/2 tea baking soda
    1/2 tea salt
    2 teas ground cinnamon
    1 teas ground ginger
    1/2 teas ground clove
    1/4 tea ground nutmeg
    1 cup dark brown sugar
    1 cup cooked, pureed butternut squash
    1/2 cup nonfat greek yogurt
    4 egg whites
    3 table molasses
    1 tablespoon unsweetened applesauce
    1 tablespoon flax seed oil
    1 teaspoon vanilla
    1/2 cup cran raisins
    1/2 cup chopped walnuts

Directions

Makes 12 large muffins
Preheat oven to 400 degrees. Spray 12 muffin cups with cooking spray.
In a bowl mix flours,flax seed meal, rolled oats
baking powder and soda, salt, cinnamon, ginger, cloves, and nutmeg until combind.
In another bowl beat together the brown sugar ,butternut squash puree, yogurt, eggs, molasses, applesauce, flax seed oil, vanilla until well blended.
Stir into flour mixture just to combine. Gentle stir in Cran-raisins and walnuts.
Divide mixture into prepared muffin pan, sprinkle with raw sugar (optional) bake in 400 degree oven for 20minutes.
