South Beach Friendly Mock Oatmeal (P1)

Introduction

A decent and fast Oatmeal substitute for Phase 1 of South Beach Diet and beyond. Smells great cooking. You could even make this at work or about anywhere with a microwave. Number of Servings: 1

Ingredients

    1 - Large Egg
    1/2 Cup - Part Skim Ricotta Cheese
    2 - Capfulls of Sugar Free Pancake Syrup
    1 - Packet Splenda
    1 - Capful of Vanilla Extract

Directions

- Beat Egg in Microwave safe bowl
- Stir in Ricotta Cheese, Splenda, and Syrup until thoroughly mixed
- Cook in microwave for 3 minutes
- Enjoy

I found it a bit dry and once accidentally added the vanilla extract, but now always double the syrup and add the vanilla. Recipe originally only called for one cap of syrup. Makes it much less dry.

*** Warning - I do NOT recommend using egg susbstitue for this. It comes out too runny and soggy.

For variety - or if you run out of SF syrup - you can use honey or flavored SF or regular coffee syrups. Raspberry is good. Color is a bit odd but beyond that it's fine.

    I first had this about four years ago from a recipe I got from an internet forum. This is great during the second week of Phase 1 when you get sick of omelets for breakfast!

  • I found this to be a good alternative to the same egg breakfast I have been eating on Phase 1. I am not a big fan of ricotta cheese but in this way of working with it I was good with it. :-) - 7/2/12

  • I came upon this looking for a crustless quiche recipe, tried it out an absolutely loved it! I added nothing this time around but I'm thinking about sprinkling some chopped turkey bacon bits into it next time! Thanks for sharing this! - 5/20/12

  • This is delicious. I added a tsp of cinnamon, 2 tbsp of vanilla soy milk and 1 tbsp of walnuts. Great, sweet, and a definite welcome break from omelets. - 3/6/12

  • I am so glad I found this today. I couldn't bear the thought of eating another omelet. Even though this does have eggs, it wasn't so omelet-like...loved the sweet treat. I also added about a tablespoon of chopped pecans. - 1/31/12

  • This was amazing! I'm still in Phase 1 and this just satisfied my sweet cravings! I added a little bit of fat free milk (a very little bit) when it came out of the microwave to help with the thickness and it helped. - 7/27/11
