Pumpkin Whoopie Pies

Ingredients

    Pumpkin, canned, without salt, 2 cup (remove)
    Egg Yolk, 2 large (remove)
    Granulated Sugar, 2 cup (remove)
    *Canola Oil, 1 cup (remove)
    *Flour, white, 3 cup (remove)
    Baking Powder, 1 tsp (remove)
    Baking Soda, 1 tsp (remove)
    Cinnamon, ground, 1 tsp (remove)
    Salt, 1 tsp (remove)
    Cream Cheese, 4 oz (remove)
    Vanilla Extract, 1 tsp (remove)
    Powdered Sugar, 1.5 cup, unsifted (remove)
    I Can't Believe It's Not Butter Stick, 8 tbsp (remove)

Directions

Beat yolks, sugar,oil, and pumpkin until smooth
Add flour, powder, soda, cinnamon, and salt beat well
Drop onto cookie sheet (48)
Bake~12 min @ 350
Cool completely

Filling
Cream together cream cheese and butter
Beat in powdered sugar and vanilla

Frost the bottom of half of the "cookies" and top with an unfrosted "cookie"

Makes 24 Whoopie pies
