Crunchy Corn Relish

Ingredients

    1 cup fresh sweet corn
    1 cup red pepper, sliced
    2 small (3" long) scallions
    Juice of 1 lime

Directions

In serving bowl, combine corn, red pepper, and scallions. Toss with lime juice and season with salt and pepper to taste.

  • made this over the weekend using canned corn. it was a hit! Only suggestion would be adding fresh cilantro next time. I can see this being a summertime staple this year though. - 4/13/08

  • The corn is not cooked, use frozen. Great recipe, I added 1 cp. rinsed black beans and used it as stuffing for low-carb wraps. Add chili powder to taste. - 4/8/08

  • If you cooked it then it wouldn't be crunchy! It is a side dish or salad served cold. Try it! My Dad loved corn relish when he was still alive. - 4/8/08
