Ingredients

*Potatoes, country style, frozen, plain, unprepared, 1 package (12 oz - 16 oz)
*Cut Leaf Spinach - Frozen, 2 cup (1 large bag)
*Hillshire Farm - Lite Polska Kielbasa
Kielbasa, pork and beef
*Hormel Bacon Bits, 1 tbsp
*Grey Poupon Dijon Mustard, 3 tsp
Cider Vinegar, 2 tbsp
Thyme, dried, .5 tsp
Pepper, black, 1 tsp
Brown Sugar, 4 tsp unpacked
Olive Oil, 1 tbsp
*onion, chopped, raw, 0.5 cup
Directions
heat half the olive oil in a nonstick skillet, saute the onion. slice the kielbasa in medallions, add to pan when onion is starting to soften. cook until desired brownness. add the rest of the olive oil and the frozen potatoes, cover, and heat over medium until potatoes are no longer frozen. meanwhile, in a small bowl,combine the sugar, mustard, spices, and vinegars. add to the potato - sausage mixture and combine well. add the frozen chopped spinach ( sometimes i use canned (well drained and dried) or fresh, whatever you have on hand). stir well and cover and heat through. approximately 5 - 10 minutes. uncover, sprinkle with bacon bits, serve.
