Tomato Bean Soup

Introduction

The basic soup is very hearty and satisfying, but you can kick it up a notch by adding hot dog pieces and croutons for more protien and crunch.

Number of Servings: 6

Ingredients

    2 teaspoons vegetable oil
    1 onion, chopped (about 3/4 cup)
    1 jalapeno, minced (1-2 tablespoon)
    1 can (14 1/2 ounce size) no-salt diced tomatoes with juices
    1 can (10.7 ounce size) condensed tomato soup
    2 cups low-sodium, low-fat chicken broth (or use vegetable broth to make this a vegetarian soup)
    1 can (14 1/2 ounce size) great Northern beans, drained & rinsed
    1/2 teaspoon salt or to taste
    Freshly ground pepper

    Optional: (not in nutrition info)
    1 1/2 all beef hot dogs, sliced into thin disks and fried crispy brown
    12 large garlic cheese crouton

Directions

1. HEAT oil in a Dutch oven or soup pot over medium heat.

2. ADD onion and jalapeno; cook until they soften, about 5 minutes.

3. ADD tomatoes, soup, broth, beans, salt and pepper to taste; cook until ingredients have warmed through, about 10 minutes.

Each serving equal 1 cup.

Optional Ingredients:
Garnish each cup of soup with an equal amoutn of the hot dog pieces and 2 croutons.
