Introduction

I DIDN'T WANT THE PASTA IN THIS SOUP AND WANTED IT THICK AND CREAMY. I HAD FROZEN SUMMER SQUASH. I RAN CHICK PEAS THRU THE FOOD PROCESSER TO GIVE THE CREAMY TEXTURE AND GRATED THE CARROTS. I DICED THE CELERY SMALL AND THE ONION. I DIDN'T WANT THE PASTA IN THIS SOUP AND WANTED IT THICK AND CREAMY. I HAD FROZEN SUMMER SQUASH. I RAN CHICK PEAS THRU THE FOOD PROCESSER TO GIVE THE CREAMY TEXTURE AND GRATED THE CARROTS. I DICED THE CELERY SMALL AND THE ONION.

Ingredients

    1 CUP SHREDDED CARROT
    1 CUP DICED CELERY
    CAN OF CHICK PEAS NOT DRAINED AND PROCESSED IN THE FOOD PROCERSSER
    1 CUP DICED VIDALIA OR SWEET ONION
    4 CUPS SUMMER SQUASH
    1 TBSP EVOO
    BASIL 1 tsp dried
    GARLIC 1 tsp minced
    1 CUP, LOW SODIUM OR HOME MADE LOW SODIUM CHICKEN BROTH

Directions

PUT BROTH AND EVOO INTO POT.
ADD INGREDIENTS AND SIMMER 2/5 HOURS STIRING OCCASIONALLY
SERVE HOT
ADD WATER IF NEEDED
