Buttermilk Pumpkin Pancakes

Introduction

I actually used the Flat Belly Diet's Easy Pancake Mix instead of the Bisquik. I actually used the Flat Belly Diet's Easy Pancake Mix instead of the Bisquik.
Number of Servings: 12

Ingredients

    Flat Belly Diet Easy Pancake Mix, 1 and 1/3 cup
    Egg, fresh, 1 large
    Buttermilk, lowfat, 1 cup
    Cinnamon, ground, .5 tsp
    Nutmeg, ground, .25 tsp
    Pumpkin, canned, without salt, .5 cup
    *Crisco Pure Vegetable Oil, 1 tbsp
    Water, tap, .5 cup
    Vanilla Extract, 1 tsp

Directions

I used the Flat Belly Diet Easy Pancake Mix (you can find the recipe online). Mix together all ingredients. Add more water to thin the mix if necessary; the pancakes will burn outside but not be cooked inside if the batter is too thick. Using 1/4 scoop, cook on griddle and serve with fresh berries or sugar-free maple syrup.
