Pumpkin Pancakes

Ingredients

    .5 cup whole wheat flour
    .25 cup oats (not instant)
    .25 tsp baking soda
    .5 tsp baking powder
    .125 tsp salt (dash)
    1.5 tsp brown sugar
    1.5 tsp Altern (Splenda)
    .25 tsp cinnamon
    .25 pumpkin pie spice
    .125 egg substitute (1/2 egg)
    .5 tsp vanilla extract
    .25 cup skim milk
    .25 cup water
    .25 Libby's 100% pure canned pumpkin (NOT pie filling!)

Directions

Mix together dry ingredients. In a separate bowl, mix wet ingredients. Combine. Drop batter by .25 cup fulls on to hot skillet sprayed with non-stick spray. My recipe made about 5 pancakes, but you can probably make them a little smaller and get about 6.
