Baked Cauliflower Extraordinaire

Introduction

Ingredients

    1 large head of cauliflower with leaves removed
    1 stick of salted butter
    1 cup seasoned bread crumbs (or crushed cracker crumbs)
    1/2 cup grated Parmesan cheese
    1 tsp Jane's Krazy Mixed Up Salt

Directions

Remove leaves from a large head of cauliflower, place in a large stock pot with about an inch of water in the bottom and steam on medium/low heat until just slightly tender.

Remove steamed cauliflower from the pot using prongs or spatula and place in a deep baking dish that has been sprayed with Pam.

In a small mixing bowl mix bread crumbs, salt and grated cheese.

Melt butter in the microwave on low power.

Pour dried bread crumb mixture over the top of the steamed cauliflower and pat with the hand so that the mixture covers the head and sides of the cauliflower.

Drizzle the melted butter evenly over the bread crumbs. Cover the dish tightly with aluminum foil.

Bake for 30 - 40 minutes in a 400 degree oven until golden brown and tender when poked with a fork.

Cut into 8 wedges and serve while hot.
Makes 8 servings.
Leftovers can be chopped and kept in the refrigerator to be reheated in the oven or microwave.
