Putenesca Pasta

Introduction

Number of Servings: 4

Ingredients

    8 oz of your favorite pasta (penne or spaghetti works well)
    1 Tbsp olive oil
    4 cloves garlic, minced
    1/4 c. onion, minced
    1/4 tsp crushed red pepper (or to taste)
    28 oz can crushed or diced tomatoes
    1 tsp dried basil or 1 Tbsp fresh minced
    1 tsp dried oregano
    2 Tbsp capers
    4 oz Kalamata or other deli olives, pitted
    1/4 c. red wine
    1/4 c. fresh parsley, minced

Directions

Makes 4 large (1 c) servings of sauce

1. Start cooking your favorite pasta according to directions minus 2 minutes.

2. While pasta is cooking in large skillet saute oil, onion, garlic & crushed red pepper in oil for 2-3 min until soft.

3. Add remaining ingredients except parsley. Simmer sauce while pasta in boiling water is cooking.

4. Add the drained pasta, raise the heat & cook for 2-3 minutes. Sprinkle with parsley.

Serve with spinach salad with chickpeas or white beans for protein.

  • Im hoping to make this soon. I used to make a similar recipe, but it included anchovies sauted in the oil (they dissolve right away and just add an interesting flavor). - 2/21/08
