Vegan Cheese Spread

Introduction

A tasty cheesy spread for sandwiches, toast, a dip for raw vegetables. Also yummy on toasted bagels with a slice of tomato and red onion slivers. A tasty cheesy spread for sandwiches, toast, a dip for raw vegetables. Also yummy on toasted bagels with a slice of tomato and red onion slivers.

Ingredients

    14 ounces firm tofu (NOT silken)
    4 T tahini
    4 T fresh lemon juice
    6 T nutritional yeast flakes
    3 T light miso
    2 t onion powder
    1/2 t garlic powder
    1 t smoked paprika
    1/2 t dry mustard
    1 1/2 t salt

Directions

Drain tofu well.
Crumble tofu into the bowl of a food processor.
Add remaining ingredients.
Process several minutes, stopping to scrape the bowl down periodically.
Chill several hours for best flavor.

Sometimes I split a batch of this after processing and flavor 1/2 of the batch with additional things - roasted red pepper and basil; cayenne, chipotle and fresh chopped cilantro; minced red onion and parsley. I'll throw just about anything in there!

Makes about 48 one tablespoon servings.
