IntroductionThis recipe is not exactly low-cal, but it is delicious, and I wanted to see how many calories it would have in it. This recipe is not exactly low-cal, but it is delicious, and I wanted to see how many calories it would have in it.
1 cup cornmeal
1 egg, beaten
1 lb. small okra (3 long or less), stems removed
1/4 cup peanut or canola oil (approx.)
* Place cornmeal, salt, & pepper in small brown or plastic bag. Drop egg-coated okra into bag & shake to coat. Shake in strainer to remove excess cornmeal. Should be dusted.
* Heat Ό of oil in 11 or 12 skillet over high heat. When oil is shimmering add okra & fry. Turn occasionally. About 4 mins.
* Okra should be brown & crisp. Use slotted spoon to transfer to platter with paper towels.
* Sprinkle with salt & pepper. Serve with lemon wedges.
