Introduction

The newspaper had a recipe and of course I made it healthier! Next time will use whole wheat flour. The newspaper had a recipe and of course I made it healthier! Next time will use whole wheat flour.
Number of Servings: 36

Ingredients

    2 1/2 cups flour (I did use white)
    1 t. baking power and soda
    1/2 t. salt (I forgot this)
    1 1/2 t. pumpkin pie spice
    1/2 cup flax seed (ground)
    4 T. butter
    1/4 c. unsweetened applesauce (mine had splenda)
    3/4 white sugar
    1/2 cup brown sugar splenda
    1 large egg
    1 cup pumpkin puree
    1 t. vanilla
    1/2 cup walnuts


Directions

Sift together dry ingredients, except flax seed. Cream butter and sugar. Add applesauce pumpkin, egg, and vanilla. Beat until smooth. Add sifted dry ingredients and flax seed and mix until smooth. Add in nuts and mix. Drop on sprayed (Pam) cookie sheet. Bake at 375 for 15 to 18 min.
