Introduction

A redo of a Uno's gluten free thin crust pizza. All of the ingredients for the crust can be obtained at Whole Foods or Trader Joe's and the veggies can be found at any produce market or your local supermarket.

I have a lot of food allergies and I always am looking for ways to make a better alternative. Brown rice flour and potato flour are overused, but coconut flour is rarely mentioned. The coconut flour in my "crust" gives this pizza a sweet and nutty flavor.

Ingredients

    Crust:

    14g Bob's Red Mill coconut flour
    7.5g Arrowhead Mills buckwheat flour
    2 TBSP flaxseed meal
    1 TBSP whole flaxseeds
    1/4 c. Egg substitute
    1 tsp non-aluminum baking powder
    1/4 tsp sea salt
    1/3 c. unsweetened hemp, almond, or coconut milk

    Toppings:

    -1/4 c. sliced green or black olives
    -1 small plum tomato sliced into thin slices
    -32g tomato paste
    -1 TBSP hummus
    -1/4 avocado sliced into thin slices
    -1/4 c. pomegranate kernels
    -15g Red Star nutritional yeast
    -1c raw purple onions
    -5 sun dried tomato pieces
    -100 g. portabella mushroom grilled

Directions

1. Preheat oven to 350 degrees

2.Take all of the crust ingredients and mix in a large bowl with a spoon until flour, flaxseed meal are fully dissolved in the Egg Substitute and nut milk.

3. Add a 1/4 tsp sea salt.

4. Take a small 10-12 inch frying pan or round baking pan and spray with nonstick cooking spray.

5. Pour mixture into the pan and put in the oven. Should take around 20-30 minutes to cook.

6. Grill 1 c. of raw purple onion slices and a 100 grams portabella mushrooms

7. Take a toothpick and check the crust to see if it has solidified.

8. Once the crust is fully cooked take 32 g. tomato paste (about 2 TBSP) and spread evenly on top.

9. Spread the 1 TBSP of hummus evenly on top.

10. Take the plum tomato slices and pile them on, followed by the sun dried tomato pieces, mushrooms, grilled onions, and avocado slices evenly.

11. Next put on the pomegranate kernels, sliced black or green olives.

12. For the "cheese" sprinkle on 15 g Red Star Nutritional Yeast evenly and voila.

Makes 5 servings ( a quarter of the pizza per person)
