Sloppy Joaquins

Introduction

Number of Servings: 6

Ingredients

    2 tbsp. Extra Virgin Olive Oil
    6 cloves Garlic, finely chopped
    1 medium Onion, chopped
    24 medium Mushrooms (cremini or white), chopped
    1 pound Ground Turkey
    Salt & pepper to taste
    1/2 cup dry Sherry
    1 15-oz. can Tomato Sauce (low/no sodium added)
    2 tbsp. Worcestershire Sauce

Directions

1. In a deep skillet, heat the olive oil over medium heat. Add garlic and onion and cook until softened, about 4 minutes. Add the mushrooms and cook until browned, about 5 minutes. Add the turkey and cook, breaking it up with wooden spoon, until browned. Season with salt & pepper. Stir in the sherry and cook, scraping up any brown bits from the bottom of the pan, until slightly reduced, about 1 minute. Stir in tomato sauce and worchestershire sauce and allow to simmer for 10 minutes.

2. Preheat oven broiler. Toast the rolls until crusty. Sprinkle rolls with fresh chopped parsley (can omit) and add the sloppy joaquin mixture.
**Rolls are not added in to calorie count**

Makes 6 servings, approx. 2/3 cup each
