Creamy, Fruity Stuffed French Toast Hearts

Introduction

Ingredients

    6 large Egg Whites
    1/2 cup Milk, 2%
    1/2 tsp. Vanilla extract
    1/3 cup Cream Cheese, softened
    1/3 cup raspberry or strawberry Preserves (50/50 Low Glycemic Brand)
    8 slices Whole Wheat bread (Weight Watchers)


    Syrup and butter to serve (not calculated in calories--can omit both)

Directions

1. In a wide, shallow bowl, whisk together the eggs, milk and vanilla extract. Set near the stove. In a small bowl, combine cream cheese and preserves-set aside.

2. Spread the cream cheese mixture evenly over 4 bread slices. Top with remaining 4 slices, making a "sandwich". Use a large heart cookie cutter to cut to shape, if desired.

3. Melt butter in large nonstick skillet (or use pan spray) over medium heat. Dip the sandwiches in the egg mixture and cook in the skillet, turning once with spatula, until golden brown or about 3 minutes on each side.

Serve with warm syrup if desired and fresh fruit. You can also substitute the preserves with the no-sugar variety to save calories.
