Low-carb Bacon and Egg Quiche

Introduction

This is a great lower-carb but also calorie friendly recipe; I found the original on Recipegal.com and have modified it to make it a little lower calorie. You could probably use more egg whites or Egg Beaters and skim milk or turkey bacon to help cut back on the calories too. I also just use a 9-inch pie pan instead of a quich pan and it works great! Number of Servings: 4

Ingredients

    4 large eggs
    2 egg whites
    1 c 2% milk
    1c grated 2% low fat cheddar cheese
    1/2 c crisp cooked center cut bacon, crumbled

Directions

Preheat oven to 350 F.
Spray 9-inch pie pan or quiche pan with non-stick cooking spray.
Beat the eggs with the milk.
Add salt and pepper to taste.
Add cheese and bacon, mix well.
Pour into pan.
bake for 40 minutes or until golden brown.

Makes 4 servings.
