Introduction

This recipe is a very easy way to "save" your ripe bananas. All you need is lemon juice, Splenda (or Equal, or sugar) and plastic cling wrap! Oh and a freezer! :-) This recipe is a very easy way to "save" your ripe bananas. All you need is lemon juice, Splenda (or Equal, or sugar) and plastic cling wrap! Oh and a freezer! :-)

Ingredients

    Banana (s)
    Lemon juice - I use the juice in the little squeezy plastic lemons. Start out with a couple of tablespoons or so.
    Splenda (or the sweetener of your choice)

    You will also need some plastic wrap that clings.

Directions

Pour lemon juice in a flat bowl or pie plate, Add a packet of the sweetener of your choice. Mix the two together very well. Peel a banana and roll it in the juice mixture. Make sure to moisten all areas of the banana (the lemon juice keeps the banana from turning dark) Then roll the banana in plastic wrap and stick in the freezer. You can add more or less of the juice and sweetener as you need more. I froze three this week and it took about 3 tablespoons of lemon juice and a pack of Splenda. It doesn't freeze hard like an ice cube. It is sort of crunchy. This works best with bananas that are ripe or even over-ripe.
