Weight Watchers Taco Soup Recipe

Ingredients

    1lb Chicken breast
    1 large onion, chopped
    1 pkg taco seasonings
    1 pkg Hidden Valley Ranch Dressing mix
    1 16 oz-Can Pinto Beans
    1 16 oz-Can Chili Beans (Hot, medium, or mild to taste)
    1 16 oz-Can Whole Kernel Corn
    1 8 oz-Can Mexican tomatoes
    1 8 oz-Can Tomatoes

Directions

Cook chicken breast and cut into bite-sized pieces. Chop onion. Combine chicken breast and onion with remaining ingredients and simmer for 1 hour. Can be served with grated cheese.

    This has been one of our family faves for years! Variations here include using ground turkey vs. chix. or when I make the vegetarian version, I substitue an extra can of black beans for the chx or turkey... Yummy! (easy to throw together when camping or doubling for feeding more people) - 5/15/10

  • Loved this easy, healthy recipe! I think it's even better leftover, so I've been eating it all week. I used the white meat chicken from a rotisserie chicken and I substituted black beans for the pinto beans. Delicious and filling! - 10/26/10

  • Loved it! This was a wonderful meal all on its own -- very filling. I used black beans instead of chili beans and added an extra can of Mexican tomatoes. A word of warning; this baby is VERY fiber rich so be prepared for the results of all that fiber :). Also, what is the serving size? - 6/8/10
