Chicken Al Fornoa Paleo

Ingredients


    6 chicken parts (with skin)
    2 cups of sliced mushrooms
    1 jar of marinated artichoke hearts
    1 pepper (any color) sliced into narrow strips
    1 onion cut into chunks
    about 1 cup of your favorite kind of black olives
    2 tomatoes cut into chunks-no need to see them
    some oil and vinegar and italian spices (I used a dried parsley mix)
    Parmesan cheese

Directions


Preheat oven to 350. Brown chicken for a few minutes on both sides, making sure that the skin crisps up nicely. Then place in a baking pan with skin side down and into the oven for about 30 minutes or until almost done.

In the meantime chop the vegetables. After about 30 minutes pull the chicken out and put all of the chopped vegetables on top of the chicken. Drizzle again with salad dressing. Let the chicken cook for about another 30 minutes or until all the vegetables are cooked through. Sprinkle Parmesan cheese on top.
