Oatmeal Peanut Butter Cookies

Ingredients

2 cups whole wheat flour
2 cups rolled oats
1 tsp baking soda
1 tsp baking powder
1 cup canola oil
1 cup peanut butter
1 cup splenda
1/2 cup brown sugar
3 eggs
1 Tbsp vanilla
Directions
1. Preheat oven to 375 F,
2. Combine flour, oats, baking soda, baking powder, & salt in a bowl. Set aside.
3. Beat oil, peanut butter, and sugars in a large bowl with an electric mixer on medium speed until light and fluffy. Add eggs and vanilla, mix well. Gradually add flour mixture, beating until blended.
4. Drop by teaspoonfuls onto greased cookie sheet, about 2 inches apart, flatten slightly.
5. Bake cookies 12 minutes or until lightly browned. Cool 1 minute, remove from baking sheet and let cool completely on wire racks.
Makes6 dozen cookies.
