Introduction

Ingredients

    2 servings (1 1/3 cups) whole wheat penne
    1 cup no-salt added marinara sauce (If you want to spruce up the jarred sauce, add a 1/2 teaspoon dried oregano and a pinch of red pepper flakes.)
    2 eggs
    4 cup fresh spinach (I sometimes swap fresh or frozen broccoli or sliced zucchini for the spinach.)

Directions

Prepare the pasta according to package directions.

While the pasta is cooking, pour the sauce into a small skillet and turn heat to medium-low. When sauce starts to bubble, carefully crack eggs onto the top. Cover and cook until eggs have reached the desired doneness (you want the yolks to be runny; some carryover cooking will occur).

Meanwhile add the spinach to the pasta just before you drain it. Stir and drain well.

Divide pasta and spinach between two bowls. Top with one egg and half the sauce. If I have it on hand, I add a dollop (1/2 ounce) of goat cheese or a sprinkle of Parmesan (calories not included).

This meal is cheap and tasty!

    Love this, poached eggs are wonderful on so many starches. Pasta is an elegant one. One change I made was poaching my egg in water. I cooked the pasta with the spinach, then drained the pasta water into a pan to poach my egg. I added the sauce right to pasta to warm. It looked beatiful. thanks! - 11/15/09

    Mm... Runny eggs is the way to go. I have made this by sauteeing chopped onions, carrots, bell peppers, and turnip greens with the sauce (rather than adding them to the pasta water), and it's turned out great every time! I'll be making this again and again. - 12/16/09

    My husband doesn't care for poached eggs,either, but he ate and enjoyed this and we will make it again soon (I grated 1 oz part-skim mozzarella on top of the eggs, so they didn't "look" poached) - 11/16/09

    I've been poaching eggs in tomato sauce and soup since I was a teen! I've done it with other soups too. I've always just served them with toast; I don't know why I've never thought pasta. I will definitely give the spinach kick a try with pasta. - 11/15/09

    WOW! I am hooked. I've made my own version of this recipe several times since I first saw it here on Sparkpeople. It has prompted me to use eggs more as a lean protein in my diet. When I really watching calories I like to replace the pasta in the recipe with spaghetti squash - 10/22/10

    I would make this again. My boyfriend looked at me funny when I put it in front of him, but he ate it all and seemed to like it. VERY FILLING! I haven't been this full in 3 days, and I have only had a little over a 1000 cal today. - 1/23/10

    I have to admit...at first I was a little weirded out by the egg/pasta sauce thing....but the more I think about it...I think I may like it. I'll keep it in mind for a quick lunch sometime this weekend. Thanks!!! - 10/23/09

    Excellent. The egg tasted really good in it and added a creaminess I wasn't expecting. I didn't have any fresh spinach (or anything else listed) so I put in a bag of frozen stir fry vegetables (thawed) which was really good. Next time I want to make it with spinach. - 11/29/09

    Made this for brunch - having missed breakfast and not wanting to wait till lunch time. Texture was amazing and it was very tasty. Carried me through to my usual late afternoon snack with no problem - as others have said it is filling but certainly not heavy. A definite regular for my food plan. - 8/3/10

    So easy and delicious and filling! I can't believe I never though of putting spinach in with the pasta before draining! The only thing I wanted with this was another texture since it was all pretty much the same. - 12/10/09

    My first great SparkPeople recipe! I subbed 1 c. dry farfalle (what I had in the house). Really filling and great in the cold weather. Next time I will take the eggs off sooner.

    I made it again and this time I used spaghetti squash instead of pasta. It was so good and a much larger helping. - 12/9/09

    I made this for dinner and my husband was a little freaked out poaching the eggs in the pasta sauce. I ended up overcooking the eggs so I just chopped them up and mixed them in. I added the oregano and red pepper flakes and a bit more spinach. My husband and I really enjoyed this dish! - 12/5/09
