Grilled Vegetable Medley

Ingredients

    2 Tbsp. olive oil
    1 tsp Italian Seasoning
    3 large ears corn, cut into 3 inch pieces
    2 med. zucchini, cut into 1/4 in. slices
    1 med yellow summer squash, cut into 1/4 in. slices
    1 med sweet onion, sliced
    1 lg green bell pepper, sliced
    1 lg red bell pepper, sliced
    10 cherry tomatoes




Directions

In a large bowl combine vegetables, sprinkle with Italian seasoning, drizzle with olive oil, toss to coat. Place on double thickness of aluminum foil, about 28 x 18 inches. Fold tightly around vegetables. Grill, over medium hear for 20-25 minutes. Or bake in oven for 10 or 15 minutes at 400 degrees. Yield: 8 (approx. 2 c.) servings
