Edamame Barley Soup

Number of Servings: 5

Ingredients

    olive oil, onion, garlic, chicken sausage, edamame, barley, pepper, chicken bouillon, hot sauce, water, diced tomatoes

Directions

1. Heat olive oil in saucepan or dutch oven, add onion and garlic, simmer 5 minutes
2. Stir in barley and sausage, simmer 5 minutes
3. Add beans, water, pepper, bouillon (or use prepared broth and less water) and tomatoes
4. Bring to a boil, reduce heat and simmer uncovered 45 minutes
5. Remove from heat, stir in hot sauce

Makes five servings of about 1.5 cups
